Make-Ahead Mashed Potatoes
INGREDIENTS
5 lbs russet or Yukon Gold potatoes
8 oz cream cheese
8 oz sour cream
1+ cup milk
3 tbsp butter, sliced
paprika
fresh cracked pepper
salt
DIRECTIONS
- Peel and dice potatoes 
- Bring to boil in salted water 
- Simmer for ~30 min. or until tender 
- Drain and beat in cream cheese with mixer 
- Beat in sour cream and milk until potatoes are fluffy. Season with salt and pepper to taste. 
- Grease 9x13β baking dish and spread potatoes evenly 
- Dot with the butter and sprinkle with paprika 
- Let cool, cover, and refrigerate up to 24 hours 
REHEATING
- Preheat oven to 375ΒΊ 
- Bake potatoes 30+ minutes until fully heated and brown in spots
