Italian Chicken, Mushrooms, or Veggies
INGREDIENTS
4 tbsp olive oil or butter
2 large chicken breasts, cubed π
  OR baby bella mushrooms π 
4 cloves garlic, minced π§ 
2 tsp onion powder π§
 
1 tsp salt
1 tbsp Italian seasoning
2 tsp red pepper flakes (or more, to taste) πΆ 
1 tsp fresh cracked black pepper
Optional: ΒΌ cup white wine πΎ
VEGETABLE ALTERNATIVE
Instead of chicken, try summer vegetables (with or without mushrooms):
1 Squash
1 Zucchini
1 Bell pepper
1 Sweet onion π§
 
2 Roma tomatoes π
DIRECTIONS
- Heat olive oil in pan (medium high heat) 
- Add garlic and stir fry ~30 sec. 
- Add chicken and immediately add salt and onion powder; stir to cover completely and let sit ~30 sec. 
- Add Italian seasoning, red pepper flakes, and black pepper and stir to coat chicken 
- Stir fry until chicken has golden sides and is completely cooked 
 If using, deglaze with white wine
TO SERVE:
Serve with white rice π 
OR with fettuccini alfredo
OR as a salad protein
VEGETABLE DIRECTIONS:
- Heat olive oil in pan (medium high heat) 
- Stir fry sweet onion π§ till caramelized 
- Add squash, zucchini, onion powder, salt and stir fry until vegetables gain color 
- Add garlic π§, bell pepper, Italian seasoning, red pepper, black pepper (stir fry ~30 sec) 
- Add tomatoes π and stir fry on high heat until tomato liquid mostly evaporates or reduces 
 If using, deglaze with white whine while tomato liquid is still reducing
