INGREDIENTS
3 cups mixed lentils, soaked 3+ hours (black, red, yellow...)
2 tbsp ghee, butter, or equivalent 🧈 
1 tbsp cumin seeds
2 bay leaves
1 cinnamon stick
3 cloves (whole)
1 large yellow onion, minced 🧅 
1 tbsp garam masala
1 tbsp coriander
1 tbsp turmeric
2 tsp cumin powder
2 tsp chili powder
2 tsp cayenne (or to taste)
3” ginger, minced
6 cloves garlic, minced 🧄 
3 roma tomatoes, finely diced 🍅
DIRECTIONS
- Heat ghee in large pot on medium heat 
- Add cumin seeds and stir fry till they begin to pop 
- Add bay leaves, cinnamon stick, and cloves, stir frying until cinnamon is very fragrant (about 30 sec.) 
- Add onion and stir fry until transparent 
- Add spices and stir fry until toasty and fragrant 
- Add ginger and garlic and stir fry until garlic is lightly browned 
- Add soaked lentils and stir to combine. Cook for about 5 min., stirring occasionally. Add water as necessary to keep from burning. 
- Stir in tomatoes + 1 cup of water. Cook till tomatoes are reduced. 
- Add ~6 cups of water, stir, and bring to boil. 
 Reduce to simmer.
- Cook for about 1 hour, or until lentils are fully cooked. Stir occasionally; add water as necessary.
