Nepali Grilled Chicken π
INGREDIENTS: SPICE PASTE
1 cup chopped ripe tomatoes π
 
  (canned petite diced in a pinch)
1 tbsp ginger, grated
3 tbsp garlic, minced π§ 
1 tbsp (fresh) lime juice
2 tsp salt
1Β½ tsp cumin
1Β½ tsp coriander
ΒΌ cup olive oil
DIRECTIONS: FOR 8β12 CHICKEN LEGS π
- Combine tomatoes with spices and wet ingredients 
- Rub spice paste under chicken skin and marinate for 8 hours or overnight 
- Olive oil on exterior and lightly salt 
- Grill over hot coals till skin is crispy and detached from the bone
