Hot Chicken & Peanuts π
INGREDIENTS
3 large chicken breasts, cubed
1 tbsp corn starch
2 tbsp soy sauce
ΒΌ vegetable oil + 1 tbsp
crushed red pepper πΆ 
1 small onion π§
 or 2 scallions
Β½ tsp ground ginger
1 tbsp soy sauce
1 tbsp sherry
2 tsp sugar
1 tsp rice vinegar
ΒΎ cup lightly salted peanuts π₯
DIRECTIONS
- Combine chicken with corn starch and 2 tbsp soy sauce 
- Heat oil and cook crushed red pepper till barely black 
- Add chicken and stir fry 3β5 min 
- In a separate pan, heat a tablespoon of oil and stir fry onion 
- Add ground ginger and cooked chicken; cook 2 min 
- Mix soy sauce, sherry, sugar, and vinegar, then stir into pan; cook 1 min 
- Add peanuts and stir to coat 
- Serve over rice
