Fried Squash
INGREDIENTS
2 medium yellow squash, 
  sliced & excess water removed**
2 cups greek yogurt
2 cups flour*
2 tsp garlic powder, divided
1 tsp smoked paprika
1 tsp fresh black pepper
kosher salt
peanut oil, for deep frying
*Extra crunchy: half wheat flour and half rice flour
**Dehydrate sliced squash:
- Slice squash into ⅛ inch slices and spread onto layered paper or cloth towels. Do not allow slices to overlap. 
- Lightly salt with kosher salt and allow to sit for ~10 min to draw out the water. 
- Press towel(s) onto slices to absorb all the beaded water, then flip the slices onto dry towels. Repeat salting/absorbing. 
DIRECTIONS
- Mix flour, 1 tsp garlic powder, paprika, and black pepper in a large bowl 
- Heat 1” of oil in a non-stick pan with high sides (medium high heat) 
- Sprinkle 1 tsp garlic powder on sliced squash 
- Coat each slice of squash in the greek yogurt then dredge in flour mixture 
- Fry till golden on both sides; remove to rack
