Fried Okra
INGREDIENTS
1 lb fresh okra, cut into spears or chunks
  (or frozen: thawed, drained, patted)
1½ tsp garlic powder
1 tsp onion powder
1 tsp cumin
½ tsp salt
½ tsp pepper
COATING FLOUR:
1 tsp reserved spice mix
1/4 cup rice flour
3 tbsp corn starch
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
½ tsp salt
black pepper, to taste
DIRECTIONS
- Mix spices together and reserve 1 tsp. 
- Sprinkle spices over cut okra in large bowl. Stir to combine. 
- Combine coating flour ingredients and pour over okra, stirring to fully coat. 
- The breading should be slightly damp. If it’s too dry, sprinkle with water and stir again. 
- Fry at 350º in batches. Drain on rack. 
- Serve hot, preferably with chipotle ranch.
