Solterito (Peruvian Chopped Salad)

INGREDIENTS
2 cans of corn 🌽
2 cans baby lima beans
½ diced red onion 🧅 
1 cup cherry tomatoes, halved 🍅
1 sweet bell pepper, diced
¼ cup white wine vinegar
6 tbsp extra virgin olive oil
¼ cup kalamata olives, sliced (optional)
½ tsp sea salt 🌊🧂
freshly ground black pepper, to taste
TOP WITH:
1 cup diced feta or queso fresco
2 tbsp finely chopped cilantro
DIRECTIONS
- Drain corn and lima beans; combine in large bowl 
- Add onion, tomatoes, jalapeño, and olives 
- Add vinegar, olive oil, salt, and pepper 
- Combine and allow flavors to meld for at least an hour before serving 
- Top with queso fresco and cilantro and serve
