Bolu Kukus (steamed cupcake)
Indonesian dessert 🧁❤️
EQUIPMENT: 
Aluminum baking cups with holes punched in bottom and sides
Thin paper muffin cups or wax paper
INGREDIENTS
2½ cup flour
1½ cup sugar
2 tbsp baking powder
½ tsp salt
1 cup coconut liquid* (or slightly less than 1 cup) 🥥
1 egg 🥚 
4 tbsp oil
1 tsp vanilla
COLOR/FLAVOR:
~1 tsp green pandan syrup 🌴
~1 tsp cocoa powder and/or instant coffee 🍫☕️ 
*Can use any combination of coconut cream/milk/juice
DIRECTIONS
- Full combine all dry ingredients in large bowl 
- Whip egg in wet ingredients and add to dry mix 
- Beat on high speed for several minutes until well aerated 
- Pour ½–1 cup of the mixture between two bowls. Add the pandan syrup to one and cocoa powder to the other. Mix to combine. 
- Put paper in baking tins and fill ¾ with unflavored batter. 
- Put about 1 tbsp of flavored batter on the top. (Can also mix flavors.) 
- Steam for about 15 min. Tops will be springy when touched.
