Lemon Bars
INGREDIENTS
¾ cup butter, softened 🧈
1½ cup flour
⅓ cup powdered sugar
1½ cup sugar
3 tbsp flour
¾ tsp baking powder
3 eggs, beaten 🥚
3 tbsp fresh lemon juice 🍋
DIRECTIONS
- Preheat oven to 350º 
- Mix flour and powdered sugar, then add softened butter. Mix well. 
- Press into bottom of 8x12” pan and bake for 15 min. 
- Mix remaining dry ingredients, then add eggs and lemon juice. 
- Pour over baked crust and bake for 20 min. 
- Once cool, dust with powdered sugar. 
ALTERNATIVES: Consider spreading a layer of blackcurrant jam over crust before pouring filling on top.
