Zucchini Bread
Mrs. Croxton’s recipe
INGREDIENTS
3 eggs 🥚
1 cup oil
2 tsp vanilla
2 cups grated zucchini
2 cups sugar
3 cups All-Purpose flour
1 tsp baking soda
½ tsp baking powder
¼ tsp salt 🧂
3 tsp cinnamon
1 cup nuts 🥜
1 cup raisins
DIRECTIONS
- Preheat oven to 325° 
- Beat eggs until foamy 
- Add oil, vanilla, and zucchini, stir well. 
- Add dry ingredients, nuts, and raisins 
- Mix well, put nto greased and floured loaf pan. 
- Bake at 325° until done (about 30–45 mins). 
- Recipe makes 2 loaves, or 3 small loaves 
- You can also freeze and enjoy.
